Centered for symmetrical grinding
When you mount a knife in the KJ-140 jig, the knife will self-center in the jig, regardless of its thickness or geometry. This means that the tool will center everything from the thinnest knives to knives up to 10 mm thick, 6 mm for tapered knives. This also means that the knife blades, which taper from the back to the edge and from the heel to the tip, are centered in the jig, ensuring symmetrical sharpening on both sides of the knife. Easy to set up, perfect results.
User freedom
Because the KJ-140 is designed so that the stop rests loosely on the universal support, you can copy the shapes of the knife, always guided by the universal support as a reference point. Thanks to this, it is possible to sharpen knives with different blade shapes, from filleting knives to butcher knives and classic chef's knives.
Perfectly balanced and ergonomic
During the design and construction of the KJ-140, emphasis was placed on the user experience. For the best grinding experience, most of the tool's weight is focused on the clamps, the part closest to the actual grinding. This provides a very good balanced feel during use.
The stop end was designed with ergonomics in mind. There is a flat surface that you can place your thumb on to secure the product against the universal support. This little feature makes grinding much more convenient.

Wider clamp - more stability
The KJ-140 Wide Knife Centering Jig works the same way as the KJ-45 Knife Centering Jig, but has a wider clamp. The wider 140mm (5.5″) clamp stabilizes thin knife blades and provides more support for an even bevel along the entire length of the knife blade. Of course, it can also be used with larger knives with more stable blades, such as chef's knives. Please note that the KJ-140 cannot be used with the SVM-00 small knife holder. KJ-45 is used instead.
